1 March, First Irish Supper

St. Patrick's Day is fast approaching, but that was not the cause for celebration. Lord willing, the last two weeks of May will find this old boy on the Emerald Isle. As the excitement builds for my once-in-a-lifetime dream trip, experiencing the tastes of the Irish culture is an important component of the adventure. What better way to get "in the mood" than to have the wife cook up some delicious dishes from there?


A couple good friends, who are making the trip with us, came over last night to play cards and dine. The wife had found a recipe for Shepherd's Pie (there are many, but we had the ingredients for this one) and also for a dessert called Irish Chocolate Mousse something, the name of which does not matter, because it was so delicious nobody cares what it is called!


Shout out to my live in chef! She came up with this at the last moment. Hopefully, this experimental dining process will be repeated another time or two before we go. With maybe a little more lead time for the cook!
